Golden White Dragon is produced from the Jin Xuan cultivar introduced from Taiwan to Fujian in the 1990s.
Its defining stage is anaerobic fermentation. The leaves are processed in an oxygen-reduced environment, encouraging the accumulation of GABA before fixation, rolling and drying.
